La Cave Sabatié 
 
Welcome to our home. La Cave Sabatié has been in our family for nearly 200 years. My grandfather used this stone built cave/winery to make and store his wine. Now it has been lovingly and carefully renovated to a comfortable and more modern standard, yet it still retains many of the original features. It is delightfully cool in summer due to the thickness of the walls - a must for tourists unused to the baking heat here in the South of France. 
 
On entering the house you will be surprised at how spacious the rooms are. The front door opens directly into a bright sunny reception room which can be used as bedroom number 3. 
 
Leading from here is a bedroom equipped with bunk beds and perfect for the children –or two agile adults! The bold and theatrical painting which adorns this room was painted by Alex, our 10 year old son. 
 
If you continue straight ahead you will find yourself in a bright, modern, fully equipped kitchen large enough for 6 people to sit comfortably at the dining table. 
 
The bathroom, which has both bath and separate shower cubicle, houses the washing machine. The toilet is in a separate room.  
 
The circular staircase from the kitchen/dining area leads you into the lounge, complete with original stone walls. Perfectly equipped for you to relax.  
 
The lounge leads directly onto the large sunny terrace complete with barbecue and garden furniture for you to make the most of the beautiful weather in this region whilst languishing in Languedoc. 
 
The exceptionally roomy master-bedroom with double bed and chests of drawers and wardrobe area leads from the other side of the lounge. 
 
Well behaved pets welcome by prior arrangement 
 
Catering available; a fully qualified chef is able to cater to your culinary needs 
 
Both owners speak fluent French and English/some German

COMFORT - as previously mentioned La cave Sabatiè is a stone built house circa 1850,- so air conditioning is not needed - they knew how to build in those days!!!  
 
All prices are based on four people staying. There is no charge for infants under 2. An additional charge per person of 10 Euro per day will be levied for any guests above the minimum of four. 
 
Our prices include bed linen and towels (beach towels are not provided). For any stay in excess of one week, clean linen on a weekly basis is included in our charges.

*** MALVIÉS 
 
Malviés is a sleepy little village set amongst rolling hills and acres of vineyards in the heart of Cathar country, 20 km from Carcassonne and 10km from Limoux. There are spectacular views all around, the most stunning of which has to be the view of the Pyrenees, which are in easy reach. 
 
Malviès boasts 3 vignerons; (3 domaines of wine producers) who all produce excellent wine! Here you can do a spot of wine tasting and then meander back, on foot, to La Cave Sabatié with a few bottles and languish in Languedoc - on the terrace in the sun! 
 
While you are in Malviès you might want to participate in one of the local fetes as these start in spring through to late summer with music dancing, eating and drinking until the early hours.  
 
There is a boulangerie in the village where, in addition to freshly baked bread, croissants and pain au chocolat, also sells a few essential groceries. There is also a post office to send off your postcards, to make your friends and family envious! 
 
CARCASSONNE 
 
The 11th century Cité of Carcassonne is only 25km away and boasts 70 houses which are still occupied within its walls. This medieval fortress is the second most popular tourist attraction in France.  
 
LIMOUX 
 
Limoux, which is 10 kms south of Malviès, is famous for its floral displays (ville fleurie), its Blanquette and its nougat.  
 
 
LANGUISHING IN LANGUEDOC 
In addition to all the usual activities in Languedoc such as golfing, fishing, cycling, (did we mention that the Tour de France passes through each year?) swimming, canoeing, white water rafting, windsurfing, visiting museums, (including the Dinosaur museum) visiting local markets, skiing, tennis, horseriding, wine tasting, ice-skating, tenpin bowling, badminton, you can visit the Roman spa town of Alet-les-Bains, where you can fill up your empty water bottles with the therapeutic mineral water, on tap, free of charge.

We prefer the changeover day to be Saturday, but are aware that sometimes another day of the week is more convenient for flights and other travel arrangements. We will do our best to accommodate you – additional days will be charged in sevenths of our weekly price - but if the house is already occupied, we will be able to provide you with the details of good local accommodation for your additional nights. 
 
A deposit of 25% is payable when you book. The balance to be paid in euro upon arrival, whereupon a damage deposit of 25% will be required in the event of breakages or damage, this will be returned to you the day of your departure.

We can help you find the right places to forage for mushrooms - chanterelles, cèpes, pied de moutons, and moreilles so that you can discover the pleasures of cooking them fresh (Jamie Oliver eat your heart out!) Or gather wild leeks, walnuts, almonds, chestnuts, figs and herbs. Best of all are the wild, fresh asparagus - just whip them up to make a tasty omelette for lunch. 
 
THE SURROUNDING AREA 
The region is renowned for its castles, monasteries and other places of historic interest. Rennes Le Château, which is alluded to in books such as Dan Brown’s famous (The Da Vinci Code) and mentioned in (The Holy Blood and The Holy Grail) is only 30km from Malviès. 
As this is the heart of Cathar Country, you will find an abundance of Cathar Castles to visit. Some of the most spectacular are Montségur, Peyreperteuse, Puilaurens, Queribus and Puivert all of which are within easy driving distance of Malviès.  
Abbeys and Monasteries are to be found at Alet, Caunes-Minervois, Fontfroide, Lagrasse, Prouilhe, Rieunette, Saint-Hilaire, (remember Dom Perignon) Saint-Martin des Puit, Saint-Papoul, Saint Martin le Vieil and Saint Polycarpe. 
 
CARCASSONNE 
The 11th century Cité of Carcassonne is only 25km away. It has been restored and was completed in the 19th century. In addition to the Château Comtal which is a must to see, there are museums, the wonderful Cathedral, the open air theatre and a maze of small cobbled streets to be explored and enjoyed. There is an abundance of places to eat ranging from fast food to the Michelin rated restaurant of the Hotel de la Cité.  
 
On the 14th July, Bastille Day,Carcassonne presents one of the most spectacular fire-work displays in Europe.At one point La Cité appears to be on fire. If La Cité seems familiar to you, but you have never Before Visited Carcassonne, it could be that you remember it because Kevin Costner, in his role of Robin Hood, Prince of Thieves, was filmed Here with La Cité doubling for the evil sheriff’s Nottingham Castle. 
 
The town of Carcassonne – La Bastide – is 10 minutes walk from La Cité. The town is based on a grid system and central to the grid is Place Carnot, the market square. The Saturday market is a riot of colour as local producers fight for your custom to buy their fruit, vegetables, flowers, plants, cheeses, bread, honey, seafood, herbs and spices. Carcassonne station is to be found just beside the Canal de Midi which was declared a World Heritage site by UNESCO in 1996. Trips on the Canal can be taken from here throughout most of the year. Carcassonne train station serves Bordeaux, Paris, Nice, Marseilles and many other places in France, and further afield such as Spain and Italy. 
 
LIMOUX 
 
Limoux, which is 10 kms south of Malviès, is famous for its floral displays (ville fleurie), its Blanquette and its nougat. It is rumoured that Dom Perignon popped down to discover how the first ever sparkling wine had been produced by the monks of the Abbey of St Hilaire, took the secret back with him, marketed it and that is why you will have heard of Champagne, but possibly not heard of the Blanquette de Limoux. It is definitely worth a try… and there are many places where you can sample before you buy. 
 
Mirepoix 
Mirepoix is less than one hour's drive and dates back to the 10th century. It is renowned for its ancient arcades and lively Monday market which is set in the area around the ancient cathedral. The narrow streets are just waiting to be explored and reveal their treasures. 
 
THE SEASIDE 
For those of you for whom a holiday is not complete without a dip in the sea, or a stroll along the beach, there are several beaches within an hour’s drive from Malviès on the Mediterranean coast. The nearest are Narbonne Plage, Gruissan, Port-la-Nouvelle, Leucate and Valras-Plage. A closely guarded French secret is the delightful village of Coulliure which is just north of the Spanish border and just over one hour’s drive from Carcassonne. Spain itself is about one and half hour's drive. 
 
ANDORRA 
The Principality of Andorra is just two hours drive from Malviès.  
Although renowned for skiing in the winter months, it is also a beautiful place for walking in the summer months.  
It is, of course well known for its tax free shopping, It is hard to understand why there is a limit of 2kgs of butter to be bought here, but I am sure there is a very good reason.
