About Castelnaudary
Castelnaudary is a market town situated on the Canal du Midi. It is also the largest port on the canal with its Grand Basin covering an area of 7ha. The town is situated in an elevated position amongst a fertile plain of Languedoc and was a major centre of cereal production in the 19th century. Nowadays the town is probably most famous for being the capital of 'Cassoulet' a dish of the region made of haricot beans, duck or goose, sausage and garlic slow cooked in an earthenware pot known as a cassole from where the dish got its name. The town even has a festival during the last week in August to celebate the dish. While the town does not have any buildings of particular architectural or historic significance it is a nice place to relax and enjoy its cafes, bars and restaurants.
